500g tomatoes, roughly cut into chunks
1 garlic clove, very finely chopped or crushed
2tbsp balsamic vinegar
4tbsp extra virgin olive oil
freshly ground black pepper
sea salt
Combine all the ingredients into a dressing and pour over the tomatoes. Gently mix and leave to marinate for at least 30 minutes at room temperature, longer if possible.
